Aoc Collioure are produced starting from an assembly of various type of vines: - For Red Collioure: Black Grenache, Syrah, Mourvèdre and Vieux Carignan. The proportion of these type of vines is different according to our vintages. - For Rosy Collioure: Black Grenache, Syrah and gray Grenache. - For White Collioure: White Grenache, gray Grenache, Vermentino and Roussanne. Yield limited to 40 Hl/Ha.
AOC Banyuls and Banyuls Great Vintage, are drawn starting from the type of vines black, gray and white Grenache, Macabeo, Malvasia and Muscats. They are generous and powerful wines. The fortification during fermentation (addition of vinic alcohol - less than 10%) ensures the wine the stabilization of natural sugars and the conservation of the flavours of the grapes. According to their mode of breeding (bottle, barrels and the old tanks) Banyuls will be Rimage (young and fruity), Tuilé or Rancio. Yield limited to 30 Hl/Ha.
Aoc Collioure & Banyuls of Cellier des Dominicains result from grapes only collected on the Commune of Collioure after a strict plots monitoring. Manual harvesting and bottling in the production area.
Apart from its AOC, the Dominican has developed especially for lovers of the "colliourenc" soil a range of wines «Soil & Tradition».
