The Banyuls wine is a natural, sweet wine developped from the Granache vine.
A process called mutation stops the fermentation, by adding a small quantity of neutral alcohol, allowing the wine to retain the essential components of sugar and the natural grape fruit flavor.
The grapes are picked between the end of September and mid-October when the fruit is over-ripe (292 grams per liter).
The maximum authorized harvest is 792 US Gallons per Hectare (2.47 acres) which is less than one bottle per vine stock. .
Depending on different methods of development and aging processes, Banyuls wines come inmany variations : medium dry wine, sweet, fruity, rancio...

Advices from "MAITRE CHAIS" :
Our Banyuls are better savored between 53 and 57 degrees fahrenheit.
Sealed bottles can be preserved for several years.
After opening, let the wine bottle breathe for one hour before serving.
